This is a book about abstract algebra: http://abstract.ups.edu/
This is about methods of proof: http://www.people.vcu.edu/~rhammack/BookOfProof/index.html
This is about linear algebra: http://joshua.smcvt.edu/linearalgebra/

Recent books are preferred but time-tested old ones also work; many books are available in DJVU format (with better quality and file-size than PDF) and to read them you'll need this: http://www.caminova.net/en/downloads/download.aspx?id=1

This isn't really "open", but it is a complete text book. It's kinda high level though.

^^^All of the ones linked from e-booksdirectory.com that are available in DJVU are hosted on archive.org, which also makes them available in PDF, plain-text, ePub, Mobi, Daisy, and even a Web-based OpenLibrary stream; it's just that DJVU is more space-efficient (it's relatively popular among mathematics publishers for this reason).

Also I just made a CHM version of Eloquent JavaScript: http://www.multiupload.com/AXJYYP6QHR
